100% Soft Rice Flour Chapati | with tips & tricks
Rice flour is the common thing that avails always in our Indian Pantry. Isn't it? This recipe is super easy to make with just Two Star Ingredients "Rice flour + Water". It is just two ingredients with few handy tricks which make this Rice Flour Chapati crack-free and super soft.
Rice flour doesn't have gluten bonds as Wheat flour do have. Still, we can make the Rice flour dough pliable to some extent with some tricks. The only work to do is to make the Rice flour dough pliable and soft to make the ever tasty Rice Flour Chapati.
The rice flour and the water ratio should be 1:1. I have used homemade rice flour for this recipe which I prepared with Sona Masoori variety. I haven't added any extra water as 1:1 ratio works fine to get a smooth and soft dough. The water quantity required depends upon the type of rice flour used. So, while cooking the rice flour in the water, stick to 1:1 ratio. While kneading the dough, if the mixture doesn't seem to gather well, add some warm water or warm milk at that time to get a soft and smooth dough.

5 Tricks to get Super Soft Rice Flour Chapati:
- Do not mix the rice flour with the hot water. Spread the rice flour all over the surface of boiling water, close with a lid and cook on a low flame for about 5 minutes. This is gonna make the dough pliable to some extent which in turn would make the Chapati crack-free and super soft.
- Knead to get a soft dough. Some rice flour seems to suck up more water and some won't. So, while kneading, feel free to add warm water if the dough doesn't gather well. Also, knead in such a way that the dough is smooth and soft. Keep in mind, with the hard dough, you would get hard rice Flour Roti and not the soft Rice flour Chapati.
- Press the dough with the hands to some extent before rolling with the rolling pin. As I said before, rice flour doesn't have gluten bonds and so, the elasticity of the dough is what we should not expect. So, pressing to some extent helps in getting the crack-free Chapati.
- As we roll the Chapati thin, the corners tend to show off some cracks. Cracked edges are not recommended to get perfectly puffed up Chapati. So, cut with some sharp circled plate or lid which helps puff up the Chapati throughout. Even with the cracks, the Chapati would be super soft and hence, this step can be considered optional.
- While cooking the Rice Flour Chapati, make sure the skillet is hot and the burner should be adjusted to medium flame. Flip often which prevents hard burnt spots on the crest. And tap gently over the Chapati which will allow it to puff up fully.
Furthermore, dip the chunk of the dough in the rice flour before rolling which makes the Chapati firm and easy to take off from the rolling board.

100% Soft Rice Flour Chapati
- Rice flour - 2 cups
- Water - 2 cups
- Salt - 1/4 tsp (or adjust to taste)
- Oil - 1 tbsp (optional)
- Pour 2 cups of water in a pan and bring it to boil.
- Add salt and oil to it.
- Spread 2 cups of rice flour over the boiling water.
- Without stirring, close with a lid and cook for 5 minutes over the low flame.
- Open the lid and mix the rice flour with the water.
- Let the mixture cools down a bit.
- Knead the mixture into a soft dough. If needed, some water could be added to the mixture while kneading.
- Take a chunk and dip it in the rice flour.
- Firstly, press the chunk of dough using hands to some extent. Then, start rolling with the rolling pin until it forms a thin Chapati.
- A few cracks at the corners are common. Cut the Chapati into a perfect circle using any sharp circle lid or plate and discard the cracky corners.
- Add the Chapati to a hot skillet and cook flipping the Chapati often.
- Keep the flame on medium and pat gently over the Chapati which makes it to puff up.
- Serve hot with any curry of your choice.

Step-by-Step Procedure with Pictures
How to Make?
- Pour 2 cups of water in a pan. Bring the water to boil.
- Add the required salt to the water.
- Add in a tablespoon of oil. Though adding oil is optional, it helps in the formation of soft dough and makes the Chapati soft. You could add ghee for more flavourful Chapati. Or you can skip the oil completely.
- Now spread the rice flour over the boiling water. Keep in mind, do not stir.
- Cover with a lid and cook for 5 minutes over a low flame.
- Open the lid and mix the rice flour with the water. The mixture would be very hot and so, let it cools down a bit.
- When the mixture comes warm, start to gather the mixture to make a soft dough. Knead well so that the dough is smooth and soft. You can add some water or milk if the mixture doesn't gather well.
- Take a chunk out of the dough. You need not rest the dough after kneading.
- Dip both sides of the dough chunk in the rice flour.
- Now, press the chunk with the hands to some extent making sure the corners are crack-free.
- Start rolling with the rolling pin. Roll into a thin Chapati.
- A few cracks at the edges are common but they hinder puffing up of the Chapati. If you want the Chapati to get puffed up throughout, cut the Chapati with some sharp circled object to get a crack-free circle-shaped Chapati.
- Put the Chapati over the hot skillet keeping the flame on medium.
- Flip often and you can see the Chapati puffing up.
- While puffing up, tap the Chapati gently with a spatula which will make the whole Chapati puff up.
- Serve the Soft Rice Flour Chapati hot with any curry of your choice.

- After kneading, keep the dough covered with a damp cloth which prevents drying of the dough.
- If the Chapati seems hard while cooking, you can brush it with little water.
- I add little oil while preparing the dough which also helps in lending the softness. You can skip the oil completely and make the recipe completely oil-free.
