Step-by-Step Procedure with Pictures

How to Make?

For Making Red Rice Paniyaram Batter:
(Visit 'Red Rice Aapam' post for more detailed steps)
  • Wash and soak raw red rice, Parboiled red rice, Urad dal, red rice flakes and fenugreek seeds in a large bowl.

  • After soaking for 2 hours, grind the soaked ingredients along with the salt to form a smooth batter.

  • Ferment the ground batter for about 8 hours to get the fermented red rice Paniyaram batter. The fermentation time differs based on the climate.

For Making Gulkand:
(Visit 'Homemade Gulkand' post for more detailed steps)
  • Mix chopped rose petals, honey and chopped nuts (optional) in a large bowl and keep it under the Sunlight for 7 days to make Healthy Homemade Gulkand. (or cook for 2 to 3 minutes over the burner to get the Instant Gulkand).

For Making Gulkand Red Rice Paniyaram:
  • Take a cup of fermented Red Rice Paniyaram batter in a bowl.

  • Add a little jaggery syrup to the batter. Since Paniyarams would be sweetened with a Gulkand filling, adding a very little jaggery syrup helps in preventing the Paniyarams from becoming overly sweet.

  • Add Homemade Gulkand to the batter. This would give the in-depth rose flavour to the Paniyaram batter.

  • Add Homemade Rose Syrup to the batter. By doing so, the batter would be super flavourful adding nice rose colour to the batter.

  • Mix all the sweet and flavourful ingredients to the batter to get back a lovely Gulabi flavoured Red Rice Paniyaram batter.

  • Add a few droplets of ghee to each mould of the paniyaram pan and fill 1/4th area of each mould with the prepared batter.

  • Place a teaspoon of Gulkand over the batter on each mould. Keep the flame on low while adding Gulkand. Doing the filling job on high flame could overcook or even burn the paniyarams.

  • Cover the Gulkand filling by pouring some more batter to all the moulds in such a way that the Gulkand filling is completely covered.

  • Increase the flame to medium, cover with a lid and cook for a minute. Open the lid, flip all the Gulkand Paniyarams and cook for 30 seconds.
  • The Love-filled, Lovely & Healthy Red Rice Gulkand Paniyarams are ready to get served.

Tips:
  • Add less amount of jaggery or jaggery syrup to the batter. Adding no jaggery would also be okay as we have Gulkand and Rose syrup added to the batter and of course, a star sweetener 'Gulkand' inside.
  • Don't worry if the Honey from the Gulkand seeps out from the Paniyarams. This makes the outer layer even more crispy.
  • Consider adding chopped nuts to the Gulkand which gives a lovely crunch and taste when goes into the mouth.
