What to Use?
To Grind:
- Coriander leaves -1 cup, tightly packed
- Green Chillies - 2
- Ginger - a small piece
- Coconut - 2 tbsp
- Onion -1 medium-sized
To Cook Rice:
- Rice - 2 cups
- Water - 5 cups
- Gingelly oil - 1 tbsp
- Mustard seeds - 1/2 tsp
- Cumin seeds -1/2 tsp
- Peanut - 1 tbsp (optional)
- Curry leaves - a sprig

How To Make?
- Boil rice with water and keep aside.
- Grind coriander leaves, onion, ginger, coconut and green chillies in a mixer to get a smooth paste.
- Add oil to a wok and wait till shimmering.
- Add mustard seeds to the oil and let it pop.
- Add cumin seeds, peanuts and a sprig of curry leaves to the oil.
- Now, add the smoothened coriander masala paste and the required salt to the tempered ingredients and stir fry for a minute.
- It's time to add cooked rice to the masala paste. Mix thoroughly adding a little rice at a time.
- Hmm.... Flavorful Coriander rice is just ready to be packed.
Tips:
- Adding peanuts is optional. Though, I prefer adding them.
- Adjust green chillies as per your taste.
- Garnish with fresh coriander leaves to enjoy the flavour of coriander.
