Ragi/Finger Millet Mini Choco Lava Cake | Ragi Choco Lava Paniyaram recipe with detailed step by step procedure.
Ragi or Finger millet is packed with Calcium, Fiber, and Amino acids which makes it one of the best nutrition sources. Doing dumplings with Ragi is a healthy choice to add to our daily diet. That too, with heavenly healthy chocolate packed inside, the lava dumplings would be a great choice to fill the tummy of your loved ones.
Happy to share that this recipe is the first recipe on my blog which I
had posted on November 22, 2019. The updated post contains a video and the
detailed recipe procedure to give you the perfectly filled Choco Lava
Paniyaram.
The idea of this super chocolaty Ragi Choco Lava Paniyaram hatched from the leftover chocolate ganache I had in the fridge. The surprise element in the middle just wondered my kid and the recipe becomes one of her favourites. The crispy outside and the gooey chocolate inside would be insanely yummy to eat. The healthiness included is what I feel success in this Choco Lava Paniyaram. If you are a chocolate lover, I bet this recipe will be the one which you die for.
The Chocolate Ganache which is used as a filling makes use of Cocoa powder, Jaggery, and Honey. The envelope of the paniyaram is prepared using Ragi, Whole wheat and Jaggery. So, the Ragi Choco Lava Paniyaram is 100% Healthy and kid-friendly fitting it as one of the guilt-free snack or brunch recipe.
Can I skip Egg in the recipe?
- Yes! Replace an egg with 2 tablespoons of curd and the Paniyaram envelope would be super fluffy as expected.
Furthermore, hot milk added to the batter ensures the softness of the paniyaram. You could flavour up the paniyaram batter with cardamom powder or vanilla extract. Adding cocoa powder to the batter would mask the ragi traces making the Paniyarams super yummy. As I prepare for my kid, I make the recipe completely chemical-free with the natural ragi flavour without adding any flavouring substances.

Ragi Chocolate Lava Paniyaram
The Chocolaty, Yummy and Healthy dumplings prepared by safely packing the gooey chocolaty lava inside the fluffy Ragi envelope.- Ragi flour - 3/4 cup
- Wheat flour - 1/4 cup
- Jaggery Powder - 1/2 cup
- Salt - a pinch
- Egg - 1 (large-sized)
- Milk - 1/2 cup
- Melted Butter - 1 tbsp
- Chocolate Ganache
Steps Involved:
- Mix ragi flour, wheat flour, jaggery powder and salt together.
- Add in the egg, milk and melted butter and whisk well to combine.
- Pour the batter up to 1/4th portion of each mould.
- Spread the batter by tilting the pan to the sides, and then fill with the chocolate ganache.
- Cover the chocolate ganache with the batter, close with a lid and cook for a minute.
- Flip all the dumplings, brush with little butter, cook for a while and remove them to a plate.

How to Make?
- Take 3/4 cup of ragi flour in a bowl.
- Add in the whole wheat flour which measures about 1/4 cup.
- Now add the jaggery powder which measures about 1/2 cup. If the jaggery powder seems to be lumpy, blend into a powder before adding.
- Add a pinch of salt. If you add cocoa powder, you can add it at this stage.
- Mix all the dry ingredients together.
- It's time to add in the egg. Whisk everything well together. You can use curd instead of the egg. If the egg used is small, add one more egg while preparing the batter.
- Add a half cup of boiled milk. You can use hot milk to get the fluffy dumplings.
- Brush each mould of a Paniyaram pan with little ghee/butter keeping it on a low flame.
- Pour batter up to 1/4th area of each mould.
- Now, tilt the pan in a circular motion to spread the batter to the sides. This prevents the chocolate from leaking outside.
- Now, time to add our yummy chocolate ganache over the batter.
- Pour the batter over the chocolate sauce in such a way as to cover the chocolate. Make sure the chocolate is well covered to get mess-free dumplings.
- Let it stay for 1 minute on a medium flame after closing with a lid.
- Flip the dumplings one after another.
- Brush the top of the dumplings with a little butter/ghee. This prevents the dumplings from drying out. Cook for a while and transfer to a plate.
- It's ready now and when you give a bite, chocolate will run like lava into your mouth. Fluffy outside and the yumminess of the chocolate inside would be a heavenly touch really.
- Substitute egg with 2 tablespoons of curd if you want to skip egg in the recipe.
- The more the chocolate inside, the more the yumminess.
- Let the batter cook for some time before you add the chocolate. It will keep your chocolate safe from leaking outside.
